Woo- it has been awhile. My bad. Here is what I make daily for the husband’s lunches, and have started doing for my own as well since life got busier.
Every few days, I put 3-4 chicken breasts in the crock pot with organic chicken broth and some seasoning. When they are done cooking, I shred the chicken with two forks, turn off the crock pot, and let the chicken cool while soaking in all of the goodness. When it’s cool enough to handle, put it in a tupperware container and keep in the fridge (duh.).
For the salads, I go in this order (feel free to substitute what you prefer- carrots or other vegetables, just don’t add, like, cookies. That is not only gross but its very fat-kid of you)
- dressing (I usually use a light balsamic vinaigrette)
- cheese cubes (DO NOT go overboard with these, 4-5 cubes is plenty)
- tomatoes (we use the cherry tomatoes for his and I prefer to chop the on-the-vine tomatoes)
- chopped small cucumbers
- lettuce (we use organic baby kale mix from Sam’s)
You can make these a few days ahead of time, just don’t shake them until you are ready to eat them!!! Again, these specific ingredients are just what we use- use what you like. But keep the protein at the bottom and the lettuce at the top. Y’all have lovely Friday!!!
